What is "Marbo-Yakisoba"?

Sendai, Miyagi Prefecture, is home to many delicious foods such as beef tongue and zunda! This time we would like to introduce a local delicacy, "Marbo-yakisoba," which is well-known among those in Sendai.

Marbo-yakisoba is a local yakisoba, a soul food loved by the locals. It is a dish of baked or deep-fried noodles topped with a hot chili paste. It was first served as a bribe dish at the original ramen restaurant "Manmi" in Sendai City, a Chinese restaurant. Today, it is available at more than 50 restaurants in Sendai, and each restaurant has a different flavor, so you will never get tired of eating it!

Chinese Restaurant Manmi, the originator of Marbo-yakisoba

In the 1970s, when the restaurant was first established, regular customers who saw the marbo-yakisoba being served as bribes requested it, and it was introduced as an official menu item.

The fresh noodles are steamed and dried in a seiro (Japanese cooking stove) for one day, then returned in hot water and baked just before cooking. The bean paste filled with minced meat and tofu is not too spicy, and is very satisfying when mixed with the noodles, which are full of flavor. The secret of this dish's popularity among men and women of all ages is the time and effort that goes into making it.

The restaurant has become so popular that it has been featured in various media. Take-out is also available, and kitchen cars are sometimes set up at local events and festivals! Maybe they will appear in your town someday...?

Fine Chinese Cuisine "Chinese Peking Cuisine Hiten

The noodles are made from "Yukikitara Flour" grown in Iwate, Miyagi, and Fukushima Prefectures. The authentic mapo doufu (bean-curd soup) is made with "Cheng Prefecture soy bean sauce," "Chaotian chili peppers," and "fully ripe hana sansho" used in Sichuan Province, China, and also contains local vegetables. The crispy surface of the noodles and the bean-curd soup are a perfect match!

Chinese restaurant "Zhong Jia Ya Shokudo Men Mei Tian

Once you try it, you will become addicted! This is a slightly matured Marbo-Yakisoba with the sibilant accent of hana-sansho (Chinese pepper). The spicy red bean curd bean paste has sweetness and richness, and is a perfect match for the thin noodles with a crispy browned surface. Delicious! Spicy! Authentic Chinese restaurant "Chinese Mao" on Yokocho

The owner is particular about steaming the noodles once and then baking them thoroughly. Crispy on the outside and moist on the inside! The noodles are very thin, which is rare.
The bean-curd soup is made with Min County bean-paste and bean-curd sauce, and has a deep, rich flavor with a hint of spiciness. The numbing taste of huajiaoyang (Chinese pepper) makes this dish so appetizing that you will want to eat it again and again!
