When talking about souvenirs from Yamanashi, many people may think of Shingenmochi, a rice cake covered with soybean flour and brown sugar. This time, we would like to introduce "mizu-shingenmochi," a very popular Japanese confectionery created by Kinseiken, a long-established Japanese confectionery store that produces Shingenmochi. This extremely rare sweet is only available in Yamanashi, and moreover, only in summer.

The secret of the clear, transparent "mizu-shingenmochi" lies in the water used. The water used is the water from the Kai Komagatake Mountains, which has been selected as one of the 100 best waters in Japan. It is also famous as natural water from the Southern Alps. In addition, the kinako (soybean flour) and kuromitsu (brown sugar) used for the mizu-shingenmochi are both specially made by Kinseiken. The soybean flour is grown by Kinseiken in a nearby field and is said to be freshly made!

Mizu-Shingen mochi is made with only a small amount of agar, enough to turn back into water in the mouth. Fujiyoshida Kinseiken "Fujicha-an" is a sister store of Kinseiken; coffee and rice balls are also available at the coffee shop on the second floor.
At Fujiyoshida Kinseiken, reservations can be made online or by phone for the Mizushigenmochi (water shingen cake)! Reservations can be made at intervals of every 30 minutes from 13:00 onwards. The store is open from 9:00 to 18:00, but is also open for breakfast from 7:00 to L.O. 9:30. Only customers who use the store for breakfast can also order the water shingenmochi as is. Reservations for breakfast cannot be made, so please visit the restaurant directly.

Sales information of Yumura Kinseiken Café

You can also purchase the water shingen mochi at Yumura Kinseiken Café, which opened in November 2024 in Yumura, a hot spring resort in the center of Kofu. Inside the modern Japanese-style store, you can enjoy Japanese sweets made with seasonal ingredients, such as Mitarashi dango and coffee agar cream anmitsu.
At Yumura Kinseiken café, reservations can be made by phone for mizu-shingenmochi! However, reservations for seats are not available, so please be sure to keep the 30-minute expiration date in mind when enjoying your takeout in case the cafe is full. Business hours are from 9:30 to 18:00.
