Kanokoya uses local ingredients such as Gifu wheat, local milk from Makiseisha, and fresh eggs from Gifu and Hida prefectures, and bakes them with an authentic Belgian waffle iron at a high temperature for a short time to provide crispy, fluffy, and moist Belgian waffles. In the small store, there are a variety of flavors of waffles, from the standard plain and chocolate chip to Hida's own unique waffles. The first one that caught my eye was the "Aburae" flavor made with Hida sesame seeds. In the Hida dialect, sesame is called aburae, and it is characterized by its savory and crunchy texture. Next to it was "Menamomi" flavor. Menamomi is a kind of medicinal herb that is said to be effective in thinning the blood. When you hear the word "medicinal herb," you may imagine bitterness or bitterness, but this waffle is popular for its refreshing, matcha-like flavor.
