Hokuriku is home to many delicious foods! Among them, "Echizen Oroshi Soba" in Fukui Prefecture is very famous. Its history is long and dates back to the Azuchi-Momoyama period when the northern part of Fukui Prefecture was still called Echizen Province.
Echizen Oroshi Soba is characterized by eating soba noodles and grated daikon together. There are different types of soba: bukkake (buckwheat noodle with grated daikon poured over it), tsuke-soba (buckwheat noodles dipped in broth with grated daikon), and tsuke-soba (soba noodles dipped in broth with grated daikon). They were invented to make soba noodles, which are said to be good for one's health, even more beneficial by eating them with grated daikon, which is said to be good for digestion and absorption.

The restaurant specializes in thinly pounded "nihachi soba" made from Ono-zairai buckwheat flour produced in the prefecture and buckwheat flour produced outside the prefecture, and "natural broth" made from three kinds of dried shavings and Rishiri kelp. Ono-zairai refers to a strain of buckwheat noodles, and the strain produced in Ono City is called "Ono-zairai. It means that the soba has been produced in Ono City for a long time.
