When you visit Hida Takayama and have a craving for noodles, the first thing that comes to mind is probably "Takayama Ramen. Takayama ramen is a simple Chinese noodle dish with a soy sauce-based broth and chirimen noodles, and there are a number of popular restaurants in Takayama City. However, do you know of a slightly different type of ramen shop located along an old road about 15 minutes by car north of central Takayama, including JR Takayama Station and the old town? This time, we would like to introduce a ramen using gibier (wild whale) that can be enjoyed only in Gifu Prefecture, which is surrounded by mountains and rich in nature!

Jibieramen Yamakujira" is directly operated by Hida Hunter Kobo, a family of hunters who run a hunting business with their family. Hida Hunter Kobo handles the entire process of catching, disassembling, butchering, processing, and selling gibier, and also operates the gibier cuisine restaurant "Yama no Sachi Uriboya" in the Takayama Machinaka Yatai Mura "Dekonaru Yokocho". This restaurant is also popular for its delicious gibier at reasonable prices.

It is a small restaurant with only 11 seats at the counter and tables, but look for the bright orange signboard and cute illustration of a wild boar. The menu posted at the entrance includes dishes such as duck bone, wild boar bone, deer bone ramen, and wild boar tsukemen, all of which are hard to find anywhere else. I was very curious about all the menu items, but I had never eaten bear meat before and could not imagine what it tasted like...so I chose the "Bear Bone Ramen" that day! Ordering and payment is done at the ticket machine right by the entrance.
Kumakotsu Ramen
This is the "Kumakotsu Ramen! The bear meat is firm and chewy, and the soup is a little thick and thick, and it goes well with the thick noodles... You can still feel the wild taste, but there is no smell at all. My companion ordered the "wild boar bone ramen," which had a little bit of a peculiar taste compared to the pork bone soup we usually eat, but it was easier to eat than the bear bone soup, which was more smooth and easy to eat. Next time I come back, I will try the Tsukemen (dipping noodles) and venison!
The restaurant is decorated with animal bones, bird bones, hunting vests, and tools used for hunting. It is quite a strange sight to eat right next to pictures of animals that were probably taken during hunting, but it makes you feel that you have to cherish the life that nature has given you...

At the end of the tour, I bought some jarkey to take home as a souvenir (the jerky is made from deer and wild boar)! (There are two types of jerky, deer and wild boar.) There were other items of interest, such as bear meat for shabu-shabu and wild boar meat, sold frozen, so next time I will bring a cool bag to buy some! I'm looking forward to seeing the rare menu items that are sometimes available for a limited time only.
