We introduce "Cafe Tamon" located in Higashi Chaya-gai, a famous sightseeing spot in Kanazawa. Cafe Tamon offers various kinds of pancakes. The pancakes are named after Ishikawa Prefecture, such as "Kaga Vegetable Goroshima Kintoki Rice Flour Mont Blanc Pancakes" and "Kaga Clan Maeda Family Five Color Rice Flour Fruit Pancakes," and are all exquisite. The restaurant is also particular about local production for local consumption, and most of the rice flour and other ingredients used in its pancakes are produced in Ishikawa Prefecture. The author, who was born and raised in Kanazawa, has visited this cafe many times, and it is well loved by the locals. As a fan of Tamon, I would like to introduce some of the pancakes I have eaten in the past.

This is a basic pancake. The toppings are simple. It came with whipped cream, honey butter, selected maple syrup, and blueberry jam. The three large pancakes are hearty, but the fluffy pancakes are gone in no time.

The pancakes are served with special red bean paste, matcha ice cream, honey butter, and Kaga-bocha cream, all specially prepared for Tamon by the craftsmen at Itaya, a long-established Japanese confectionery in Kanazawa. These Japanese-style pancakes are perfect for the atmosphere of Higashi Chaya-gai, where the cafe is located.

Tamon also offers a limited-time menu that changes seasonally; the February 2022 seasonal pancake was a chocolate pancake made in collaboration with Kanazawa's craft chocolate "FILFIL CACAO FACTORY & CAFE. The chocolate topping, which is shaved in two different ways, powdered and rough, slowly melts in the warmth of the pancake, turning it into a rich chocolate sauce. This seasonal pancake is the reason why I keep coming back every month.
