The soul food of Hida Takayama is Yaki-soba [Chitose].
Take the east exit of JR Takayama Station and walk about 3 minutes to the left. There is a restaurant with a long line. The name is "Chitose. I have not been there for a long time. The first time I ate there was when I was taken there for lunch with a local. At the time, I was asked as a matter of course, "Yakisoba for lunch?" I answered, "Of course. I answered, "Of course. There was a line in front of the restaurant then, and there is still a line now.... The menu was posted outside (in addition to yakisoba, there were also Chinese noodles and toppings), and while I was deciding, my turn to enter the restaurant came around.
After entering the restaurant, you buy a meal ticket. Before, you had to pay at the cash register after eating.
Now, the yakisoba you have been waiting for. I always top it with a fried egg. It is rather large for a regular portion. The thin noodles are mixed with the rich sauce and the tender, semi-boiled yolk, which increases the richness and flavor of the dish! The red ginger accents the sauce, creating an addictive taste that is perfectly suited to the expression "just right! I gobbled it up in one gulp. The taste was so good that I concentrated on eating it as hard as I could! The feeling of satisfaction after finishing the meal is like finishing a job (laughs). Dishes are cleaned up by self-service. After leaving the restaurant, you will think, "When should I come back next time? I can't wait to come back again. After all, the soul food of Hida Takayama is not ramen but yakisoba.
