Yakisoba "Chitose" is the soul food of Hida Takayama.
Take the east exit of JR Takayama Station and walk about 3 minutes to the left. There is a restaurant with a long line. The name is "Chitose". I have not been there for a long time. The first time I ate there was when I was taken there for lunch with a local. At the time, I was asked as a matter of course, "Yakisoba for lunch?" I answered, "Of course. I answered, "Of course. The taste was so good that I concentrated on eating it as hard as I could! The feeling of satisfaction after finishing the meal is like finishing a job (laughs). After all, the soul food of Hida Takayama is not ramen but yakisoba.
