Mizuyokan has a very long history. It was made in any season during the Edo period, and it is said that it was only from the Taisho period to
the early Showa period that it became established as a summer confectionery.
Fukui Prefecture is famous throughout Japan for eating it in winter, but there is also a wagashi shop in Murakami City, Niigata Prefecture that makes mizuyokan only in winter.
It is said that the agar used to make mizuyokan hardens slower in the summer, so the mizuyokan tastes better in the winter.
