Shiratsuyu" is located a little further back from the main street of Higashi Chaya-gai. The excellent mont blanc made with chestnuts purchased from local chestnut farmers is finished right in front of your eyes. Here is a video of the process!

How was it? Shirakuro's chestnuts are said to have a very low sugar ratio. The sugar ratio of a typical Mont Blanc is more than 30 percent. There is a reason for this: chestnuts are protected by a hard skin and are easily damaged, so increasing the amount of sugar has the effect of making them last longer. However, Hakuro keeps the sugar content to less than 5 percent for "High-grade Noto Yaki Chestnut Mont Blanc" and less than 15 percent for "Japanese Chestnut Mont Blanc". This allows us to enjoy the aroma and flavor of freshly made and freshly squeezed chestnuts, although they do not last long.
