What is "U-men", the soul food of Miyagi Prefecture? Shiroishi On-men

Shiroishi On-men" is a local dish of Shiroishi City, Miyagi Prefecture! Surprisingly, many people do not know about it. Shiroishi On-men is a thin, long noodle dish made without using any oil, and it is lighter than somen noodles.
It is said that the origin of Shiroishi Onmen dates back to about 400 years ago, when a young man named Suzuki Ajiemon, a resident of Shiroishi Castle in the Date Domain, tried his best to find a good meal for his ailing father, and made noodles without oil. From this story of filial piety, Lord Kojuro Katakura of Shiroishi Castle named the dish "U-men" (warm noodles), meaning "warm and considerate heart.
Also, its short length of 9 cm is popular for being easy to boil and eat, and it is loved by men and women of all ages.
