Located a five-minute walk from Sawai Station on the JR Ome Line, Sawanoi brewer Ozawa Shuzo Co. For more than 300 years since its establishment in 1702 (Genroku 15), the brewery has been brewing sake with the famous water of Okutama. 2024 will see the registration of traditional sake brewing as a UNESCO Intangible Cultural Heritage, and sake is attracting a lot of attention. In this issue, we will introduce you to the Ozawa Sake Brewery, which has not only a historic sake brewery, but also a restaurant where you can enjoy special meals, a garden by a clear stream, and other facilities on the premises!

Sawanoi" brewed by the Ozawa Sake Brewery is a local sake of Tama and has long been loved by the locals. The name "Sawanoi" is derived from the name of a place called "Sawai-mura" (Sawai Village), where a rich stream of famous water flows through the area. The famous water of Tama is also used as brewing water, supporting the long history of Ozawa Sake Brewery.

Take a tour of the brewery

You can listen to explanations about the history of sake brewing and the sake brewing period while actually watching the sake being pressed. We also received a detailed explanation of how sake is made and the different types of sake. We were guided through the brewery by an Ozawa Sake Brewery staff member, who showed us about the equipment and the rice actually used to make sake, and we were able to learn about the process of sake production using diagrams. The tour included an up-close look at the Genroku Brewery, which has existed since the brewery's founding, and the Brewery Well, located behind the brewery, providing a valuable glimpse into the conditions that existed at that time.

Sake tasting is also available!

At the end of the brewery tour, visitors can sample Sawanoi's sake, which changes with the seasons. This time, two types of sake were served: "Hiyahoroshi" and "Tokyo Kurabito. Visitors are also given a sake cup at the reception desk, which they can use for sake tasting. The sake cup can be used for tasting at the sake tasting area. If you do not wish to taste the sake, you can have a cup of special yuzu cider instead of the boar cup. One of the attractions of the brewery tour is that you can enjoy the tasting while listening directly to the Ozawa Sake Brewery staff!

Touraku" where you can taste dishes using tofu as an ingredient.

Ozawa Sake Brewery has two restaurants, "Mamagoya" (reservation required) and "Touraku", which serve homemade tofu using Sawanoi's brewing water. This time we went to Mamoraku, which is available without a reservation. Here, you can enjoy Ozawa Sake Brewery's sake and "Mamagotoya's tofu and yuba".

This time we had "Mousai-men" and "Toro-yuba-dashi gake-zen". Mousai-men is a seasonal menu item, and is a warm Inaniwa udon-like dish with a smooth texture. At first, you can enjoy it as it is, and then add Tosai-men's special Toroyuba (grated yam and yuba) if you like, for a change in taste. The Toroyuba Dashi Kake Zen is a luxurious dish with Toroyuba made by TODORAKU. You can enjoy it with yakumi (condiments) as it is, and then pour dashi broth over it to your liking to enjoy it chazuke-style. The menu and the contents of the small bowls of food change depending on the season and the time of year, so you can enjoy your meal no matter when you visit.

While enjoying your meal at Mamoraku, you can also enjoy the view of the Tama River and the seasonal changes in nature. You can also enjoy a glass of Sawanoi sake with your meal. When you visit Ozawa Sake Brewery, be sure to stop by Mamoraku as well.

At the Ozawa Sake Brewery, which is under Sawanoi's direct management, you can always enjoy tasting about 10 different kinds of sake at the sake tasting room. Sawanoi's special sake selections include "Kou," "Daiginjo," "Soten," "Special Junmai," "Dainariguchi," "Honjishu," "Genroku-shu," and "Nama-shu. Visitors can enjoy a wide range of sake types, from fruity tastes to crisp, dry sake. We hope you will enjoy the various sake encounters you will have through tasting sake.

Things to do around the Ozawa Sake Brewery

Ozawa Sake Brewery is not only a sake brewery, but also a natural leisure land where visitors can enjoy the clear stream garden Sawanoi-en, a CAFE, a tofu restaurant, as well as art and culture. In the garden, there is a "brewery-direct store" where visitors can purchase sake, sake manju, wasabi pickles, and souvenirs from the Mamagoya. On the terrace, visitors can enjoy noodles, sweet sake, miso konnyaku, and Mamagoya's special tofu. At the Garden Gallery, visitors can view paintings, crafts (ceramics, lacquerware), and other works of art. At CAFE Shizuku, visitors can enjoy drinks and sweets, including coffee made from brewed water. There are two tofu restaurants, "Mamagotoya" and "Touraku. At "Mamagotoya," visitors can enjoy homemade tofu yuba dishes by reservation only in a 100-year-old Japanese house along the Tama River. The restaurant is also available for celebrations and memorial services. Mame-rak" is a tofu and yuba restaurant that is open to customers without reservations. A short distance away are "Kansanji Temple" and "Gyokudo Art Museum". Walking along the Tama River from Ontake Station, you can feel the murmuring of the Tama River and the nature of Okutama while walking to the Ozawa Sake Brewery.
