The water used for the dashimaki tamago is sourced from Kosuge Village in Yamanashi Prefecture, the home of the headwaters of the Tama River! Shiitake mushrooms, kelp, dried bonito flakes, and dried sardines are added to the broth, and after a long night of letting the flavor slowly develop, a deep and delicious broth is completed! The eggs, the star of the dish, are four eggs from the luxurious Kawanabe Egg Farm in neighboring Ome City. The eggs are cooked over high heat in a short time. The dashimaki set menus are filled with such attention to detail, and each has its own characteristics!
