27 sake brewing companies mainly from the greater Morioka area will participate, offering sake tasting for a fee by ticket system and selling sake for take-out. The Morioka Marugoto Fair will also be held. The Morioka Wide-Area Marugoto Fair will be held jointly with other events, and restaurants will be participating, offering a variety of gourmet foods using prefectural ingredients that go well with sake.

We would like to introduce some of the breweries and sake breweries we recommend in the Morioka area. We asked them about their actual sake brewing process, their thoughts on sake brewing, and sake pairings. How about using this as a reference when selecting your sake for the event?

This craft brewery aims to create beer that fosters human connections in the local community, with the dream of making craft beer with hops grown on their own farm while harvesting vegetables grown with their own hands and using them as a secondary ingredient in Iwate, the No. 1 producer of hops in Japan. Aiming to make the happiest beer in the world with the vegetables and hops (dreams and hopes) they grow, they built a brewery with their employees in Hachiman-cho, Morioka City, Iwate Prefecture in August 2021, and finally started brewing beer after about 3 years of thought and effort. After about three years of hard work, we finally started brewing beer.

Interview with Toko Sasaki, President of NANBU CRAFT BREWERY!

How did you start making sake?

NANBU CRAFT BREWERY

I studied architecture and worked in renovation and new construction, and now that I have finished raising my three children, I brew beer that I like and that I hope people who don't like beer and women can enjoy as an everyday beer when they take a breather. When my children were young, it was difficult to enjoy beer, but now that I have more time on my hands, I hope that the mix of people who drink craft beer, the people who make it, the ingredients, and the seasons will create a single flavor, and that I can create moments of relaxation and conversation with my own unique beer while brewing craft beer. We hope to create a time of relaxation and conversation with our unique beers. We would be happy if you could pick up a bottle as an item for family gatherings or as part of the local community.

What kind of pairing do you recommend?

When Mr. Sasaki was studying architecture, he was attracted to the appeal of not only buildings but also places where people communicate and gather with each other. KOTO WINE MORIOKA】, which owns 5 farms and a brewery in Morioka City, Iwate Prefecture.

KOTO was created by the residents of four communities in Morioka City, Iwate Prefecture, in an effort to cheer up their hometown. KOTO" was named after the first letter of the Roman alphabet of the four regions, Kurokawa, Otobe, Teshiromori, and Ogao (former Kawahigashi district of Tonan Village). The area east of the Kitakami River, which straddles Iwate and Miyagi prefectures, is known for its several farms and pastures on lush green hillsides, and for its apples. 2023 will see the opening of a winery. The company's own vineyards, covering approximately 2.4 ha, are divided into five plots where various varieties of grapes are grown, with Muscat Berry A as the main grape variety, and the winery has five farms and a brewery. The wines are characterized by sweet, slightly carbonated wines bottled in the middle of fermentation and wines made by letting whole bunches of grapes sit in tanks to reduce the extraction of astringency.
Located on the east side of the Kitakami River, the vineyard overlooks the town on a sunny hillside facing west with a view of the neighboring town.

Interview with Chihiro Yoshida, Representative Director of KOTO WINE MORIOKA

What made you start making sake?

Ms. Chihiro Yoshida

I have been training in winemaking in and outside of Iwate Prefecture since 2019, and will open a winery in 2023. Before working in wine, I worked in acupuncture and relaxation. The idea of creating a winery came when I realized that three apple fields were no longer being used in one year. After discussions with a network of local businesses in four areas of Morioka City (Kurokawa, Otobe, Teshiomori, and Okefu), which is also the origin of the name "KOTO," we decided to plant grapes in the apple fields and create a winery. I was working in the relaxation business at the time, but since I liked learning new things, I joined the winery project without hesitation and experienced everything from growing grapes to winemaking, shipping, and events for a year. I also took a training course for new farmers at an agricultural college and a course on winemaking, and since then I have been working at other wineries and continuing to learn. The next spring we planted half the current area of grapes, and the spring after that we planted the other half, leading to the start of winemaking at the winery in the fall of 2023 when the grape vines were five years old.

What kind of pairing do you recommend?

There is a slightly carbonated sweet wine with a strawberry aroma made from the "Muscat Berry A" grape variety. It is especially recommended to taste it with strawberry desserts. Since he and those around him were not originally familiar with wine, he is making wines with the aim of making even people who do not usually drink wine interested in wine and want to drink more of it. KOTO Petit Anne, a slightly carbonated sweet wine, is a wine in which the fermentation process is stopped in the middle. Wine is made by breaking down sugar into alcohol, and during the fermentation of wine, there is a period of time when the wine tastes like sweet juice due to the remnants of grape juice. When wine in the middle of fermentation is packed in bottles and allowed to ferment in the bottles, the carbon dioxide that is released during the transformation into alcohol has nowhere else to go and dissolves into the wine. This carbonation is then converted into carbonic acid, and by stopping the fermentation process, a slightly carbonated sweet wine is produced. It is a wine that even those who do not normally drink wine would like to try. What does wine made by Mr. Yoshida taste like?

Tsuki no Wa Sake Brewery in Shiwa Town, Iwate Prefecture, the birthplace of the Nanbu Touji, or the Southern Toji.

The sake brewery continues to take on new challenges, such as producing pure rice sake using 100% glutinous rice, which is said to be unsuitable for sake brewing, and producing shochu that makes the best use of the rice used to make it. The name "Tsuki no Wawa" (meaning "moon ring" in Japanese) comes from a legend that a golden moon reflected on a pond was considered a good omen when Minamoto no Yoriyoshi, Yoshiya, and their son suppressed a rebellion in the Mutsu region during the Mae-nen no Yaku period in the late Heian period (794-1185). Although this is not the original meaning of the name, the name is also used for the Tsukinowaguma bear, and many bear-inspired designs have been incorporated into the sake mark.

Interview with Hiroko Yokozawa, Managing Director and Chief Brewer of Tsuki no Wa Sake Brewery

What is your favorite thing about Tsuki no Wa Sake Brewery?

In 1997, I joined the Tsuki no Wa Sake Brewery and began brewing sake. We have been developing products such as gelato and sake kasu (sake lees) in order to inform sake drinkers and non-drinkers alike about the benefits of sake. Although the first brewer is different from the others, the owner-touji has been brewing sake for generations, and in order to maintain close ties with the local community, they continue to hold "Tsuki no Wawa wo Yumemu Kai," a sake brewing workshop organized by the local community center, where participants can learn about the brewing process and even try their hand at making sake. The Tsuki no Wa Sake Brewery has the "Wakasaya Ice Cream Garden," which offers gelato in the "Wakasaya" direct sales store on the premises, and sells ice cream made with "rice koji" (rice malt). The "Koji-kouji" ice cream, made only with rice, rice koji, and milk, is a patented ice cream made by applying the sake brewing technology of saccharification by the power of koji, without adding sugar. It contains 40% fewer calories than regular gelato, although it does contain granulated sugar and whipped cream, which serve as thickeners. We invite you to taste it at the restaurant.

What kind of pairing do you recommend?

We recommend the "Sanma no Shioyaki (grilled Sanma)" with lime-squeezed sake on the rocks and the "Taro Zubonuki Daikon No Oroshi Ponzu (grated daikon with vinegar)" with heated junmai sake. (*It is said to be called "supponuki" or "zubonuki" because after boiling the taro, the skin is completely peeled off in one go.) We recommend pairing "Daikon and squid lizardfish simmered in miso lees and fluff" with Dai-harakuchi junmai sake. All of the ingredients are autumnal, and we hope you enjoy them with Iwate's ingredients.

Sake and other alcoholic beverages made with koji, including sake, have been recognized as a World Intangible Cultural Heritage, proving to people around the world that it is a wonderful traditional culture.
