A new brewery has opened in Tono City, Iwate Prefecture, Japan's largest hop-producing region, to pioneer the future of Japanese hops by not only brewing beer but also developing new hop varieties, cultivating hops, and researching processing techniques. BREW (Brewing) & GROW (Cultivation)

Hops are the soul of beer. GOOD HOPS] is involved in growing, brewing, and researching hops to bring out their aroma, bitterness, and character to the fullest extent. Beer brewing begins with the growing of hops, and it is only in Japan's top hop-producing region that beer is born.

Hop researchers, hop farmers, and brewers get together to share ideas, and through repeated experimentation and research, they brew beers with a focus on Japanese hops. The day will come when you will be able to drink beer like you have never had before.
In Tono, which boasts a history of hop cultivation of more than half a century, the brewery is expanding its possibilities by growing new varieties of hops developed in-house as well as overseas varieties. In addition, harvested hops are processed using proprietary technology. The company has developed a technology to extract only the lupulin from the hops' ball flowers without heating, and this allows the hops' true aroma to be conveyed in the beer. The cultivation and processing of hops are also very interesting.

What kind of beer can I drink?

At the time of my visit, there were six kinds of beer available, each with its own characteristics, and I was curious about all of them. In such cases, you can ask for advice from a professional, who will give you detailed information on everything from the first beer to the order in which you should drink them. A variety of beers are available, from beers with a tropical aroma like pineapple made with IBUKI, the most widely grown variety in Tono, to experimental beers created with new hop varieties and unique techniques and ideas. We took a tour of the brewery.

On the day we visited, the brewery was open for tours, so we headed to the restaurant with great anticipation. The tour started with a talk about the large tanks in the brewery, which are equivalent to about 3,000 cans of beer, and we enjoyed learning about malt, hops, and the process of making beer. After learning about the process of making beer, the beer we drank tasted much better than usual, and we were able to appreciate the people who made it.
