Hokuriku editorial staff introduces you to our favorite restaurant, "Sake to Shokuyujin Minato". (Actually, we were wondering for over a year whether to publish this article because we didn't want it to become any more popular...) *) We decided to write about it because our desire to let you, the readers of and trip. know about Kanazawa's delicious restaurants prevailed.

How do I make a reservation at Sake & Shokuyujin Minato?

At "Sake to Shokuyujin Minato" in the Korinbo and Katamachi areas, you can enjoy seasonal local fish, local cuisine, and locally brewed sake. You are really lucky if you can get in without a reservation...! The restaurant is crowded with locals and tourists every day, so "I definitely want to go!" If you are so inclined, we recommend making a reservation in advance. Currently, we do not accept reservations via the web, only by phone.

When making a reservation, you will be asked about the sashimi platter. Don't hesitate to ask for enough for the number of people! (Laughs) They offer an assortment of delicious seafood from Hokuriku.

Sake Menu

The author's favorite is Yoshidagurau.

The brand I definitely order when I come to Minato is "Yoshidagurau" from Yoshida Sake Brewery Co. It is a fresh sake with a slight (just a little) tangy carbonation on the tongue.......This refreshing drink refreshes the palate and keeps the food flowing into the mouth.... It is the kind of sake that keeps inviting you to take the next sip.

My companion said to me, "I love Yoshida Kurau! Isn't it delicious? Isn't it delicious?" When I told my companion, "I love Yoshida Kurau! What?

Kijoshu is a sweet sake made by using sake instead of water when brewing sake. We would like to encourage those dry sake drinkers who say, "I don't like sweet sake," to try this sake! The Yoshidagura u series of kijoshu are all fresh and not too sweet! At the time of our visit, the red label on the right was not yet on sale to the general public, but the president of the brewery brought it to Minato...! It was nice to see something a little special before it went on sale! Only at the counter can you have this kind of exchange with the staff.

We have a variety of delicious snacks!

The crab miso gratin is recommended as a strong snack! There is pasta downstairs, so it is recommended if you are visiting Minato for the first time (when you want to eat a hearty meal as well).

Fugu Milt Grilled on Kelp
In addition to the regular menu, be sure to check out the blackboard menu as well♪ The charcoal-grilled menu is our top choice. The photo shows the kombu-roasted blowfish milt. The flavor of the kelp is imparted to the milt and it is absolutely delicious! Why do fish and vegetables become so fragrant and delicious when grilled over charcoal?

Seasonal seafood items are also listed on the blackboard menu. If you visit in the summer, you should try the iwagaki (rock oysters) and mizu nasu (eggplant) sashimi if you find them on the blackboard menu. The iwagaki are larger in size than the maki oysters, and even a single one is very satisfying. Try it with a squeeze of lemon for a refreshing taste!

You can't miss the seasonal specials...! Kabako drunken crab

As the name suggests... this dish is made by marinating the female snow crab, "Koubako crab," in sake & other seasonings while it is still raw, in order to get the crab drunk. The dish is full of umami, so the sake is gulped down as the crab is slowly brought to the mouth. The fishing season for Kabako crab ends at the end of December every year, so it is a limited-time gourmet dish that can only be enjoyed for less than two months after the opening of the crab fishing season in November.

If you want to compare different types of sake, we recommend the sake tasting set!

Anyway, I would like to try a little bit of various kinds of sake! We recommend the "Gankona - 20 Sake Sets," which allow you to compare 20 different types of sake. The order of drinking is from the front to the back! That's all there is to it. The rest is up to you! Some people share the set with more than one person. By the way, the menu name "Gankona~" has a different nuance from "stubbornness. In Kanazawa dialect, "ganko" = "amazing" is often used.
This is enough for 4 bowls!

Cheese to go with Sake

Japanese food is associated with sake, and cheese with wine, but there are also cheeses that go well with sake.... My favorite is "fugu no ko (blowfish roe) cream cheese" in the middle of the photo. Fugu no ko refers to the ovaries of fugu (blowfish). In Ishikawa Prefecture, there is a local dish of fugu ovaries pickled in rice bran.

Ishikawa is the only prefecture in Japan where fugu ovaries can be detoxified!

As everyone knows, fugu is poisonous, especially in the liver and ovaries. For this reason, only the "meat" of the blowfish is edible. Then, why is it possible to eat pickled fugu ovaries even though they are poisonous? There is a theory that tetrodotoxin, the poison of fugu, is leaked out by salting and pickling, or that the poison is decomposed by microorganisms in the process of fermentation and disappears... In fact, even today, the details of why the poison disappears have not been clarified. Therefore, fugu no ko (blowfish roe) is produced as it has been produced for a long time without changing the production method. It is a delicacy that you should definitely try when you come to Ishikawa Prefecture.


The detailed service and attention to detail are pleasant...!

The author loves Minato's fugu no tago cream cheese. I was so impressed that when I asked for a second helping of the cream cheese, the chef said, "Sure, I'll have some more. I was very impressed. The staff at Minato are all very kind. For example, when four of us were sitting at the counter eating rice, they asked us if we would like the dashimaki tamago (rolled egg) served in four equal portions on a small plate. When four of us are eating at the counter, for example, the staff is so kind that we are touched by their kindness.
