Did you know that Hotel Monterey Sendai in Sendai City, Miyagi Prefecture, offers two types of breakfast: a buffet-style breakfast that includes a variety of standard Japanese and Western dishes, and a Japanese-style set meal that includes two types of rice balls from Hitomebore, Tsuyahime, and Date Masamu, which are the pride of Miyagi Prefecture.

Chef Kobayashi, who worked at a Japanese restaurant and a long-established ryokan in Miyagi Prefecture before joining Hotel Monterey Sendai in 2015, was appointed as Chef de Cuisine at "Zuientei" in 2015. It all started when the previous chef returned to Sendai from Kansai as "head chef," and Chef Kobayashi was called upon as sous chef at that time. He was called in as sous chef at that time. Then, about three years ago, the former chef resigned, and he took over as head chef.

It has been just one year since he started serving "Wa-teishoku" last October. We are particular about local production for local consumption in Miyagi Prefecture, and since many of our customers come from other prefectures, our basic premise is to please them by focusing on prefectural ingredients and local cuisine. Basically, the menu changes on a three-month cycle: December to February, March to May, June to August, and September to November. There are seven types of ingredients for onigiri, from which you can choose two of your favorites. The basic ingredients remain the same, but the "miso" is changed according to the season: "Seri Miso" in winter, "Walnut Miso" in fall, "Nanban Miso" in summer, and "Bakke Miso" in spring, all based on "Sendai Miso". In addition, the chef recommends "Gyu-Shigure" using Sendai beef.

The "Japanese/Western buffet breakfast" is also popular, and although it took some time for the "Japanese set meal" to be recognized at first, we now have reservations for about 20 people every day. Most users are on weekends, and the clientele is still mostly elderly couples. Basically, there are three sessions at 7:00, 8:00, and 9:00 a.m., and reservations are required, but if there is room on the day, it is OK! And what a surprise! And what's more, you can have another onigiri (rice ball) at least once.
Some customers even choose to have another onigiri (rice ball) with white rice instead of onigiri, because of the way the rice is cooked. The amount of water is slightly changed so that the rice is not cooked the same way depending on the characteristics of the rice, and it seems to be different both when you hold it and when you eat it. In addition, it changes from taro soup in the fall to Hatto soup, a local delicacy of Tome City, from December, and Shiraishi On-men Okuzukake from summer onward. Recently, many people from within the prefecture and guests staying at nearby hotels come to eat here. Incidentally, the only other prefecture in the Monterey Group that offers a "Japanese breakfast" is Okinawa Prefecture, besides Miyagi Prefecture.

The chef happened to find seaweed from Konno Shoten. The laver is even used on the "TRAIN SUITE Shikishima. At first, the chef was buying laver from a store in a department store in the city, and then he called the store directly.
I was looking for good laver in Miyagi Prefecture and happened to find [Konno Shoten]'s laver.
At first, they cut the laver into thirds and offered it for general household use, but now they stock it for commercial use to avoid the hassle of cutting it into thirds.

[Laver Sommelier] submitted documents to the Commissioner of the Patent Office and received the title in 2008. There is no examination, but he had a hard time coming up with the text. Originally, "Nori" and "Eggs" were the honor student of prices, but recently the rising water temperature has made it difficult to produce Nori.
In fact, seaweed producers are located in various places in Miyagi Prefecture, such as Watari, Higashimatsushima, Yamoto, and Shichigahama, and every New Year, a seaweed fair is held at Shiogama Shrine in Shiogama City. President Konno also serves as a judge for this competition.
Currently, the number of onigiri specialty stores is increasing, and there are inquiries from famous onigiri shops in the Tokyo metropolitan area to purchase directly from them. The wife of a certain major league baseball player also orders from the U.S.

Most hotels and ryokans serve breakfast in a buffet style, where you can eat whatever you like and as much as you like.
