Kano Gani" is a brand of crab produced in Ishikawa Prefecture, from "Kaga" to "Noto." Only male snow crabs larger than 9 cm and whose quality the fishermen are confident of are labeled with a blue tag bearing the name of the fishing port and shipped to the market as "Kano Gani.

Kano-gani is landed by trawlers at Hashidate, Kanazawa, Tomirai, Wajima, and Takoshima fishing ports. Highly fresh Kano crabs landed that day are lined up at the ports and then transferred to the market.
The thick legs of Kanokani crabs grown in the nutrient-rich Sea of Japan are packed with so much meat that they almost overflow when the shell is cracked open! When boiled, the crab meat is moist and sweet, and its delicate flavor can be enjoyed. It is a symbol of the seafood that Ishikawa Prefecture prides itself on, and should be enjoyed every time winter arrives.
