Autumn is the season for fruits and vegetables such as yakimos (sweet potatoes), chestnuts, persimmons, and apples. In Nikaho City, Akita Prefecture, figs are now in season. The figs are a little different from ordinary figs, characterized by their small size and firmness!

Northern limit figs

Located in the northernmost part of Japan for commercial cultivation of figs, Ohtake Village in Nikaho City, Akita Prefecture, grows about 90% of the figs produced in the prefecture that are distributed. They grow the "White Zenoa" variety, which is resistant to cold damage and suitable for processing. Unlike the variety widely known in Japan for eating fresh figs, this variety originates from France and retains its bright green color even after ripening.

Cherish the traditional manufacturing method passed down from generation to generation

From late September to late October, when the harvest is due, figs arrive from fields within a 2 km radius of the processing plant. After the figs are washed in a washing machine, they are rinsed in hot water in a Japanese kettle to remove dirt from the sap and skin and clean them. When washing the figs in hot water, the water is not stirred but only switched up and down two or three times.

After washing, the figs are boiled in the juice made from the annual preparation, without using water, so that the original sourness of the figs is brought out in the nectar! The figs boiled in the juice are sweetened in stages over time. The figs are first boiled with sugar, and at the end, when syrup is added, they become shiny and golden. Then they are allowed to rest for two hours to increase their sugar content. As they rest, the figs absorb the sugar solution and the sugar content of the dew drops, so they are finished with additional sugar. A certain amount of sugar is necessary to preserve them at room temperature.
