Many of you may say, "Nagano Prefecture is famous for soba!" I think there are a lot of people who say "Nagano Prefecture is famous for soba! It is a must-try dish when you come to Nagano, isn't it? Conveniently located in front of Nagano Station, there is a soba restaurant established in 1833! Whether you are thinking, "I'll have to eat soba first when I get to Nagano Station" or "I can't leave Nagano at the end of my trip without eating soba! Whether you are looking for soba at the end of your trip, or you are thinking of leaving Nagano without having soba, why not try Shinshu soba at Soba-tei Aburaya?

Soba-tei Aburaya serves excellent soba made with water from Shinshu.

Founded in 1871, Soba-tei Aburaya was originally named "Aburaya" because it had been selling rapeseed oil and other products since the Edo period (1603-1868). As time went by, the restaurant opened a branch in front of the station to serve soba, which is how it came to be what it is today. At Sobatei Aburaya, you can enjoy handmade soba noodles made with cold water from Shinshu, which is tightly sealed and characterized by its firmness. They are also particular about the sauce, and use two different types of sauce to match their soba dishes. The soba with a smooth and firm texture is a perfect match for the restaurant's special sauce.
If you simply want to enjoy the smoothness of soba, Morisoba is recommended!

Recommended menu item: Togakushi Oroshi Soba

If you have come all the way to Nagano, you want to eat soba that is unique to Nagano! We recommend the Togakushi Oroshi Soba (Soba with grated radish and local Togakushi grated radish). It is topped with a generous amount of grated daikon (grated radish), which is a reference to the local mountain Togakushi. The seaweed sprinkled throughout the dish also resembles the rocky surface of Togakushi Mountain! Other ingredients, such as nameko mushrooms and tenkasu (tenkasu is a type of fish cake), add a nice textural accent to the soba and go perfectly with the grated daikon!

What else is on the menu at Sobatei Aburaya?

In addition to Togakushi Oroshi Soba, there are many more options to enjoy soba at Sobatei Aburaya. Although it looks similar to Togakushi Oroshi Soba, Iizuna Oroshi Soba has not only grated daikon but also grated yam! The cold soba with grated yam makes it a perfect summer menu item. Warm dishes such as Tempura Soba and Kamo Nanban are also available, as well as rice dishes such as Tempura Set Meal! If you want both, there is also a set menu that includes soba and a bowl of rice.

A la carte dishes and local sake are also recommended!

In addition to the soba menu, Sobatei Aburaya also offers a variety of dishes made with local ingredients. We recommend the grilled ita soba (buckwheat noodle), which is served with the set of negi miso (green onion miso) for a perfect combination of crispy outside and soft texture inside with the flavor of green onion.
The restaurant also offers a wide selection of Nagano Prefecture's local sake, as well as soba-yu (buckwheat noodle soup) mixed with shochu (Japanese liquor). Sobatei Aburaya is also recommended for those who like to drink. â
