Aoyama Sohonpo offers trout sushi with a refreshing sour taste.

Aoyama Sohonpo is a long-established store conveniently located about a 5-minute walk from Toyama Station. The restaurant offers trout sushi carefully prepared one by one, using only the finest ingredients such as rice, vinegar, trout, bamboo grass leaves, and bent bamboo leaves.
Aoyama Sohonpo's trout sushi has a refreshing taste with the soft flavor of "Chidori-vinegar" and kombu dashi (kelp dashi). Yonekyu Masu no Sushi is a relatively new restaurant located about 20 minutes straight from the North Exit of JR Toyama Station.
Yonekyu's trout sushi emphasizes rarity. By cutting the meat thicker and not marinating it too much in vinegar, the restaurant insists that the original flavor and smooth texture of the trout be enjoyed to the fullest. Try the first bite without soy sauce.

Founded in 1925, Koho has maintained its long-established tradition of making trout sushi with the utmost care. It is located about a 1-minute walk from the Sakurabashi stop of the streetcar running in the city.
Takayoshi's trout sushi is made with wild cherry salmon that has been live-fished on the boat and specially grown rice called "Koshihikari" from Toyama Prefecture. The balance of mild sourness and just the right amount of salt made it easy for me to finish my meal!
Takayoshi is basically closed on Sundays, so please be careful if you plan to visit on weekends.

Aji no Yamamasa, a hidden gem loved by the locals.

Aji no Yamamasa is a hidden gem in the Nomura district of Takaoka City. Although it is located far from major sightseeing spots, it gives the impression of being a restaurant loved by locals.
Yamamasa's trout sushi is light pink, fatty, and raw, with a good balance of thickness, rarity, fatty flavor, and sourness from the vinegar. The restaurant closes when it runs out of product, so come early or call to make a reservation before you go.
