Usually, "purchasing," "boiling," and "cooking" of crabs are done separately by different specialists, but Mr. Kentaro Tabata, the owner of Narimae, is different. He personally purchases crabs at the market, boils them, and then takes a knife to the kitchen at "Sushi Yoshida. Mr. Tabata knows every aspect of the crab from the moment it is landed to the moment it enters the customer's mouth, so he is a connoisseur in his own right. This is one of the secrets of its deliciousness.

Thorough quality control

The purchased crabs are placed in a tank managed by Narimae. Before being landed, Echizen crabs live in muddy areas at depths of 200 to 400 meters and store a lot of mud in their bodies. Therefore, if the crab is boiled immediately after purchase, the mud remaining in its body will dissolve out, leading to a cloying taste and odor. We put the crabs in a tank and let them slowly expel the mud from their bodies, usually for 3 to 4 days, or for 2 weeks to 20 days for larger crabs. The process of mud shedding varies from crab to crab, and we are very thorough in checking each crab by picking up one cup every day.
Did you know that crabs sometimes cut off their own legs? This behavior is called "jisetsu," and in nature, it is done to protect themselves from outside enemies. (It is the same as a lizard's tail.) However, this behavior can also occur when the crab is under stress.
At Narimae, we use specially processed red lighting to match the habitat environment of Echizen crabs, which live in deep water. The water temperature is also kept at 3 degrees Celsius, the same as the sea water temperature of the Echizen crabs' habitat, so that the crabs do not feel stressed while they are discharging mud in the tank. This meticulous quality control leads to a delicious taste.

The taste of good quality Echizen crab, which is under thorough quality control, is greatly affected by the way it is boiled. Narimae has a special pot for boiling crab. With a structure that prevents heat from escaping and keeps the water at a constant temperature, the surface of the meat and crabmeat can be quickly hardened and boiled without losing any of its flavor.

The order is also important!

Echizen crabs come in male and female forms, and the female crab is called "Seiko crab" in Fukui. When boiling in a special kiln, they boil the "Seiko Crab" first. The reason being that male crabs hardly produce any broth! Echizen crabs are boiled in water with plenty of flavor components dissolved in it. How could it not be delicious?
