Agata Bakery's goal is to be "a bakery that makes people happy every day. As a bakery located in Shinshu, we are committed to four things.

We are particular about wheat.

We mill our own Yume-Kaori wheat, locally grown in Nagano Prefecture, on a stone mill, slowly and carefully grinding 7 kilograms of wheat a day; we do not overwork the mill as grinding too much wheat at one time will result in a burnt smell from the oil in the wheat. We grind a little bit every day, because we want the bread to have the original aroma and flavor of wheat.

We are particular about yeast.

We use two types of yeast: our own and a yeast company's.
Basically, the homemade yeast, which we have been making every day since the establishment of the company, is mainly used for hard breads, while the yeast from the yeast company is used for soft breads. However, due to past experience and new discoveries, we use the right yeast for each type of bread through trial and error.

We are particular about ingredients.

We use fresh local vegetables to make the right ingredients for our bread. We are especially particular about prepared foods, using plenty of vegetables as ingredients for bread, and in summer, homemade pickles are carefully handmade by staff with experience in cooking....
Other butter is made by Yotsuba Dairy to maximize aroma and flavor. Shortening (solid fat made from vegetable or animal fats and oils) for milk bread is also chosen (*) without emulsifiers.

This mortar is used to grind the wheat that we are particular about every day. I was able to actually see the mill and could clearly see that it is not spinning too fast, but is grinding slowly and carefully. I heard that whole grain bread has been booming recently, and it is becoming more and more popular at [Agata Bakery], which uses particularly special wheat. Therefore, we have created bread made with 100% whole wheat flour. It has been well received by customers!
