Tsubomi is a Japanese-style cafe located about a 2-minute walk from the 21st Century Museum of Contemporary Art, Kanazawa in Kanazawa City, Ishikawa Prefecture, and has a history of over 50 years. This time, we would like to introduce shaved ice, perfect for the coming season and filled with the specialties of a ryotei (Japanese-style restaurant). Exterior view of the restaurant interior.
Shaved ice with a focus on "tasting the real thing
Tsubomi usually sells shaved ice from around Golden Week through October. Instead of using natural ice, we use ice from Kuramoto Ice Industry, a long-established ice company with a history of more than 90 years in Kanazawa City. The ice is stored at minus 5°C, which is higher than usual, so that it has a soft and fluffy texture rather than the "sharp" heady coldness that is often associated with shaved ice.
I had the "Kuro Mitsu Kinako."
Kaga-bocha tea and shiratama (white rice balls) are also included in the set. This time, I had the "Kuromitsu Kinako". The ice is soft and melts easily, so it is recommended to pour the kuromitsu a little at a time. The inside of the shaved ice is filled with kinako (soybean flour). The ice is so soft that when you scoop it up, it dances around in the air. The ice is so light and melts so quickly that it dances with the slightest breeze, making it easy to eat. The sweetness and bitterness of the kuromitsu matches the aroma of the soybean flour, creating a refined taste! The shaved ice is served with Kaga-bocha tea, so it is a luxurious time to savor it while taking a breather.

Fruit syrups are made from delicious fruits according to the season: ripe strawberries from May and apricots until mid-June, each with a luxurious flavor packed with deliciousness. The production area is changed from south to north according to the season in each region of Japan. The product is made by a ryotei (Japanese-style restaurant), which is why it is packed with the desire for customers to "taste the real taste. Shiratama (white peach)

The attention to detail does not stop with taste. The restaurant's interior space is created by Kanazawa craftsmen, and the garden, which can be viewed from inside the restaurant, has trees growing in the mountains, allowing you to experience the four seasons. Also worth noting is the stone wall in the background. You can feel the history of Kanazawa Castle as it is the outermost stone wall of the castle. The murmur of the river below the stone wall also gives you a taste of the castle's history. The sound of the river can be heard even inside the store, and a relaxing time passes by.
