In 2001, the Food and Agriculture Organization of the United Nations (FAO) designated June 1 as "World Milk Day" in order to raise awareness of milk and the work of dairy farming and dairy industry. In Japan, June 1 has been designated as "Milk Day" and June as "Milk Month" every year since 2007.

In Fukushima Prefecture, there are production companies in four cities (Fukushima City, Motomiya City, Minamisoma City, and Iwaki City) and two towns (Aizubasange Town and Minamiaizu Town), and seven different types of milk are produced. This time, we took a factory tour at Aizu Chuo Dairy Corporation, which is famous in Aizu Sakashita-cho!

Freshly squeezed raw milk arrives every day!

Every morning, raw milk is delivered to the factory from the dairy farmers and transferred to large tanks. Aizu Chuo Dairy contracts with about 20 dairy farms, all of which produce in Aizu! Also, the tanks are separated by region so that the raw milk from each region does not get mixed up.

Did you know that the taste of milk changes with the seasons? Cows do not like the heat, and in summer they drink a lot of water, so their milk is low in fat and light. On the other hand, in winter, cows store fat in order to survive the severe cold, so they produce high-fat, thick milk. The taste also changes depending on the type of feed! We humans share the milk for the calves, so we should take good care of it.

How milk is produced

The taste of milk also changes depending on the production process. The popular product "Aizu no Beko Tokuno Motto Shibori" uses the low-temperature concentration (RO) process to concentrate freshly squeezed raw milk at low temperature without losing any of its flavor. It is 100% raw milk with a rich, concentrated sweetness and full flavor without using any additives.

At the end of the factory tour, we had the opportunity to experience a milk tasting! We tasted four kinds of milk this time. The three different types of milk, which are produced in different processes, were surprisingly different in taste, even though they are the same milk. In addition, the "Beko Milk Coffee Express" is made from 85% raw milk, and is recommended for milk lovers!
