Sushi is also made on the spot. Some of the items included Fukui salmon! Sushi made with locally caught fish is the best sushi I've ever had. The theater-style buffet "Niji" purchases and serves fresh fish caught in the local prefecture whenever possible.

Fish is not only served with sushi! There was also an assortment of sashimi. Since they are particular about local products, white fish is the main ingredient. The taste was light, but the meat was firm and beautiful. The amaebi (sweet shrimp) was also excellent, with lots of roe on it.

4. Local morning vegetables

The vegetables are also carefully selected, and the chef serves them in tempura or on the grill. According to the manager, the same menu for kaiseki cuisine must be served to everyone, so it is necessary to purchase a large quantity of vegetables and fish from other prefectures to make it feasible. However, at a buffet restaurant, local vegetables that are not available in large quantities in the market can be purchased and prepared in small quantities, allowing for a "once-in-a-lifetime encounter" with the ingredients.

5. Special Echizen salt

Even the salt is produced in the prefecture! A small jar of salt was placed in the grill corner. This salt is Echizen salt from the Echizen Sea, roasted, ground on a millstone, and finished with a mixture of wasabi, sesame oil, and other ingredients to create this flavored salt.

This buffet has a strategy

Everyone thinks about "strategy" when coming to a buffet. There is a limit to the amount of food you can eat, so there are probably many people who look at all the dishes before taking a plate (I am one of those people). (The author is that type). Then they bring the dishes they want to the table and say "Itadakimasu" (Thank you for the food). Please be careful about the order in which you bring the dishes to the table. In a theater-style buffet, there are many live kitchens, and all the dishes are freshly prepared. Therefore, it would be a shame if you don't make an effort to taste the freshly prepared dishes right away! We strongly recommend that you bring drinks, salads, and cold side dishes (sashimi, sushi, etc.) first, and then bring warm dishes (steak, pizza, grilled crab, etc.). By not bringing the hot dishes all at once, but by picking them up fresh each time, you can enjoy this theatrical buffet to the fullest.
