Yonezawa Ramen: The same taste as before [Yonezawa Ramen: Shina-Soba Kumabun

Kumabun's standard "Chinese Soba
Have you heard of "Yonezawa Ramen"? It is a representative gourmet dish of Yamagata Prefecture, and is a staple that attracts many visitors from within the prefecture as well as from outside the prefecture. The characteristic feature of Yonezawa Ramen is noodles with a lot of water in them, which is called "high water content" in technical terms. The soup is usually made from chicken stock and dried sardines.
Kumabun" is a famous restaurant that has been familiar to Yonezawa citizens for a long time.
The owner, who has taken over the restaurant from his predecessor, is still in his 20s. He used to work there as a part-timer, but when the owner asked him if he wanted to take over the restaurant, he decided to stay in his hometown and carry on Kumabun's flavor.

I actually went to Kumabun and tasted it!

The first thing that surprised me was how quickly the food was served after I placed my order. Again, it was served within 5 minutes of ordering.
Kumabun is known for this dish. The ingredients are nari, nori, menma, chashu pork, and green onion. Despite its light appearance, the soup is rich with the aroma of chicken stock and niboshi (dried sardines), and goes great with the chigire-men noodles. It is easy to see why people say they want to eat it every day.
The frizzy noodle goes well with the soup and is a perfect match.
Another dish is the "Menma Ramen" with lots of bamboo shoots on top.

This dish is a must for menma lovers.

Then there is the Chashu Ramen, which has six large pieces of meat on it.
The pork shoulder is tender and easy to eat, and it goes well with the soup!

There are also miso ramen, tanmen, wakame ramen, and more.
I want to try them all!

Yonezawa City, which we visited this time, has the largest population in Yamagata Prefecture and is a castle town associated with the Uesugi clan.
