Pudding made by a local jam company

Shinshu Pudding Studio is located on Nakamachi-dori in Matsumoto, Shinshu, a town with the atmosphere of a castle town. It is the first sweet specialty store of Sudojam, a local jam producer, and opened in the spring of 2019 as part of our daily exploration of new possibilities for jam, not just the common idea that "jam is to be eaten with bread". Shinshu Pudding Kobo's puddings are all new in terms of ingredients, taste, production method, and appearance, and are a new type of pudding in which the pulpy confiture (*) plays a leading role. Each pudding is carefully made one by one in the store's workshop.

*Confiture is made by soaking fruits in sugar, leaching out the juice, and boiling it down. Jam is jelly-like because it is boiled down with sugar until the original shape of the fruit is broken down, while confiture is liquid, leaving the shape of the fruit.

1. The confiture with plenty of pulpiness is the star of the show.

The confiture with a rich pulpy texture was developed exclusively for pudding so that it tastes best when eaten with pudding. In addition to the standard strawberry, blueberry, and apple products, there are also limited-time products such as Shinshu apricot, one of the largest producers in Japan, and marron paste made from Japanese chestnuts grown in Azumino and presented to the Imperial Household!

2. Smooth white pudding that complements the confiture!

Shinshu Pudding Studio features white pudding. The richness of the egg is utilized while the bright colors of the confiture are also highlighted, making it a delight to look at. Made with milk from Azumino and natural vanilla beans, its mellow aroma and richness will make you happy.

We offer a variety of puddings for customers of all ages to enjoy, including "Castle (White) Pudding," a local pudding inspired by Matsumoto Castle, "Shinshu Pudding (Plain)," which allows you to enjoy the taste of the pudding itself, "Azumino Milk Soft," made from freshly squeezed milk, and "Pudding Parfait," a collaboration of our signature pudding and soft serve ice cream. I tried the castle (white) pudding!

I actually tried the castle (white) pudding.
First, the appearance. It is a simple package with only a sticker on the bottle container and an illustration of Matsumoto Castle on the sticker. The design of black letters and illustrations on a white background is chic and very stylish. The pudding would look great in a photo with Matsumoto Castle in the background!
Now open the package and take a bite. The sweet pudding's original flavor and the thick white sauce are a great match. The sauce had a milky sweetness that made me smile with its deliciousness. The second bite was with the caramel sauce. This one has a bitter taste that contrasts with the sweet pudding and fills your mouth. The jar full of pudding was quickly devoured. The sweetness is just right and there are so many varieties that you will unintentionally want a second one!

How about a Matsumoto souvenir?

Shinshu Pudding Kobo's puddings are also available only for a limited time, making it hard to decide which one to try. Of course, you can buy not only one, but two or three from the wide variety available, or you can visit Matsumoto for the limited time offerings.
