Speaking of ramen, there are many kinds and flavors of ramen such as "soy sauce," "miso," "pork bone" and "salt. What kind of ramen do you like?
In Niigata Prefecture, which boasts a large area, there are "Niigata's five major ramen": Nagaoka ginger soy sauce, Tsubame back fat, Niigata thick miso, Niigata light soy sauce, and Sanjo curry, each of which has its own unique flavor!
One of them, Tsubame City, known as the city of western tableware, has a soul food called "Tsubame back fat ramen." During the high-growth period of the 1950s, the city received orders for about 800 bowls a day from factories busy manufacturing metal tableware for export.

Ramen was born in the midst of history and the Western tableware industry.

Tsubame City is famous for its metalworking industry, and since the early Showa period, the manufacture of metal Western-style tableware has been very active, with craftsmen working late into the night.
The craftsmen worked until late at night, and were often too busy to eat the ramen that was delivered to them right away.
For these artisans, a local ramen store invented "back fat ramen" that was thick and rich and did not get cold easily.
With noodles that do not stretch easily, a rich soy sauce flavor, and so much back fat in the ramen that the bowl never gets hot, this ramen has been loved and enjoyed by Tsubame's craftspeople and the people of the city.
Back fat ramen can be found throughout the city.

What are the characteristics you are interested in?

The soup is a salty soy sauce-flavored broth with a hint of niboshi (dried sardines), sprinkled with back fat, and topped with extra-thick udon-like noodles and ingredients such as chashu pork, bamboo shoots, and large chopped onions.
The soup, which is not kudzu, is also unique to Tsubame's back fat, with the addition of niboshi broth beautifully neutralizing the richness of the soup, and the onions refreshing the palate!

In Tsubame City, there are a number of stores where Tsubame back fat ramen can be eaten, and store information can be found on the "Tsubame Back Fat Ramen MAP" by scanning the 2D barcode.

In March 2022, it will be recognized by the Agency for Cultural Affairs as a "Food for the Future 100 Years Category - Aim for 100 Years! ~The ramen is certified by the Agency for Cultural Affairs as a "100-year food for the future!

Tsubame's back fat ramen was recognized by the Agency for Cultural Affairs as a food culture that was born with the development of the metalworking industry, and was selected for the "100 Years of Future Food Category: Aim for 100 Years! ~This project was recognized by the Agency for Cultural Affairs as a "100 Years of Food for the Future". In this project, the Agency for Cultural Affairs certifies various unique regional food cultures rooted in the natural climate and history of Japan as "100-year food," with the aim of encouraging each region to disseminate its own food culture and pass it on to the future.
