Visit to the brewery famous for "Takashimizu

Akita Prefecture is known as one of the best rice-producing areas in Japan. We will try to put together a special feature on sake, as "where there is good rice, there is good sake".
The first volume of the "Akita Sake Brewery Tour Special" is a sake brewery tour to the famous "Takashimizu" sake brewery in Kawamoto, Akita City, about 3 km southwest of Akita Station. The site of the brewery is much larger than expected!

The site is much larger than I had expected, and I was lost until I came to the entrance here.

Go to the Sennin Brewery

The red-roofed building in the back is the Senjinkura.
The head office has two breweries, the Senjin Brewery and the Senju Brewery, where sake is made mainly by hand.

Most of the work is done early in the morning, but if the timing is right, you can see the brewing process during a tour.
The tank on the far right is covered with a cloth, so it is probably being brewed...
Sake brewing tools that were used in the past were also on display!
You can also sample the brewing water that was used here. The area is said to produce groundwater with low iron content, which is indispensable for sake brewing. The water is soft and mild to the palate!
Finally, we enjoyed sake tasting and shopping.
